My Ultimate Best Chicken Avocado Fijita Recipe





Ingredients:

  • 1 1/2-pounds boneless skinless chicken breasts cooked and seasoned 

  • 1 red onion, sliced into 1/2-inch thick rounds

  • 2 orange and/or yellow bell peppers, quartered, seeds removed

  • Shredded Chedder Cheese

  • Sour Cream

  • Thin Sliced lettuce

  • Tortillas


  • Avocado Sauce Ingredients:
    • 1 Shell less avocado diced
    • 1/2 an onion diced into small and tiny cubes
    • 1 clove of garlic
    • 1/2 of a tomato diced
    • 1/2 tablespoon of lemon juice
    Directions:
    • Grill the chicken and vegetables, turning, until the vegetables are tender and the chicken is cooked and juicy
    • Let chicken rest 5 minutes. Place the tortillas on the grill until just warmed through, about 30 seconds.
    • To assemble the fajitas: slice the onions and peppers into thin strips and then slice the chicken.
    • Place some peppers, onions, chicken, cheese, sour cream and avocado sauce in a tortilla
